Expert Tips for Perfect Kachori
1. The Dough Matters Most
Add enough oil as moyan to the flour before kneading. The dough should feel slightly crumbly before you add water. This is what gives kachori its signature flaky, crispy shell. A dough with too little oil will give you hard kachoris.
2. Rest the Dough
After kneading, cover the dough with a damp cloth and rest it for 15–20 minutes. This relaxes the gluten and makes it much easier to stuff and seal the kachori without tearing.
3. Seal Tightly
When filling with SND Kachori Masala stuffing, pinch and seal the edges very firmly. Any opening will cause the kachori to burst open in the oil and absorb excess oil.
4. Fry on Medium Flame Only
This is the most important tip! Never fry kachori on high flame. Medium or medium-low flame allows the kachori to cook slowly from inside out, giving you a fully cooked, puffed and crispy kachori. High flame will brown the outside while leaving the inside raw.
5. Do Not Crowd the Pan
Fry 2–3 kachoris at a time in the oil. Overcrowding drops the oil temperature and results in oily, soft kachoris instead of crispy ones.
